Ube Halaya: Filipino Purple Gold
Ube (pronounced "OO-beh") is a purple yam that reigns as the dessert king in the Philippines.
What is Ube?
Ube is a bright purple yam with a nutty-vanilla flavor. It's processed into Halaya (jam), ice cream, cakes, and more.
Ingredients
- 1 kg Ube (purple yam), peeled and cubed
- 2 cans condensed milk (14 oz each)
- 1 can coconut milk (14 oz)
- 100g butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions
Step 1: Steam the ube Steam the ube cubes for 20-25 minutes until soft.
Step 2: Puree Press the steamed ube through a sieve or puree finely. The finer, the better!
Step 3: Cook Melt butter in a large pot. Add ube puree, condensed milk, and coconut milk.
Step 4: Reduce Cook on medium heat for 30-40 minutes, stirring until thick and glossy.
Step 5: Cool Pour into a greased mold, smooth the top. Let cool completely.
Tips for Perfection
- Don't stop stirring - it burns quickly!
- It's ready when it coats the spoon
- For extra shine: Brush with melted butter
- Keeps for 1 week in the fridge
