Ube Halaya: Filipino Purple Gold

Ube (pronounced "OO-beh") is a purple yam that reigns as the dessert king in the Philippines.

What is Ube?

Ube is a bright purple yam with a nutty-vanilla flavor. It's processed into Halaya (jam), ice cream, cakes, and more.

Ingredients

  • 1 kg Ube (purple yam), peeled and cubed
  • 2 cans condensed milk (14 oz each)
  • 1 can coconut milk (14 oz)
  • 100g butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

Step 1: Steam the ube Steam the ube cubes for 20-25 minutes until soft.

Step 2: Puree Press the steamed ube through a sieve or puree finely. The finer, the better!

Step 3: Cook Melt butter in a large pot. Add ube puree, condensed milk, and coconut milk.

Step 4: Reduce Cook on medium heat for 30-40 minutes, stirring until thick and glossy.

Step 5: Cool Pour into a greased mold, smooth the top. Let cool completely.

Tips for Perfection

  • Don't stop stirring - it burns quickly!
  • It's ready when it coats the spoon
  • For extra shine: Brush with melted butter
  • Keeps for 1 week in the fridge

Serving Suggestions

  • As a bread spread
  • As cake filling
  • With ice cream
  • Pure as dessert
  • In Halo-Halo
